Rear tyre size

Had a bit of a look, but no love. Anyway, question is this. What's the widest rim/tyre combo i can upgrade to for the back
end without needing to modify the swingarm? I'm looking at any and all options for wheels

A 180 is about max with a stock fender. A 205 is about max for a stock swing arm, if you cut the brake retainer off.

so i should be able to squueze a 180 onto the factory rim?

You should use a minimum of 4.5" wide rim when using the 180. Someone might have put a 180 on the 3.5" wide rim, but I haven't read where they had done this, so I'm not sure.
